Every February world-wide athletes flock to Westby for it’s annual Ski Jumping  Tournament held only 23 miles Southeast of La Crosse, Wisconsin. The 2009 dates are February 7 & 8th.  Opening ceremonies begin at 12:30 pm.  The Westby House Victorian Inn is only 3 miles from the event.  A reminder, that buttons are required to attend: $15.00 in advance and $20.00 at the gate. Baked Oatmeal

Ingredients:

3 cups Oatmeal
1 cup Brown Sugar- packed
2 t. Baking Powder
1 t. Salt
1t. Cinnamon
1 cup Milk
1 1/2 cup melted butter
2 eggs, beaten
For variety, add diced apples, bananas, raisins, and/or nuts.
Directions:
Mix all ingredients. Grease a 9′ baking pan with oil or cooking spray. Bake at 350 degrees for approximately 30-35 minutes. This bakes like a cake; insert a toothpick to check for doneness. Can be made ahead and held up to one hour in a warm oven.
